In this case, Chapman rises on a Sunday morning, not expecting a whole lot out of the day, but hoping to enjoy a bit of quiet with a book, a cup of lukewarm tea, and sitting outside in the cool fall air. As she experiences a calmness (the first since her incarceration) she notices a large chicken contentedly pecking at the ground.
This moment provides a bit of clarity for Chapman, that sometimes hopefulness is found inside of yourself.
Of course the moment ends when she recounts her lovely morning to her fellow inmates and is immediately dispatched to Red (Kate Mulgrew) when she mentions The Chicken.
Apparently, The Chicken is Red's very own white whale who appeared to her in a dream dressed in a little hat and smelling like Chicken Kiev. For Red, The Chicken is hope for her belly and a taste of the outside world.
